1 Large Orange

Slice off the top 1/8th of the orange and cut out the fruit. Leave in 1 1/2 oz. of the juice. Shake well all including the orange juice with cracked ice. Strain into the orange shell. Serve with a straw.

"Infuse for 1/2 hour and strain into punch bowl the oranges, sugar and water. Add Rum and Brandy. Stir well. 4 oz. of Curacoa, Noyaux or Marachino may be added."

Fill 10 oz. goblet (large wine glass) with shaved ice. Add ingredients and stir. Dress with assorted fruits and berries and add straw.


Port Eggnog

1 fifth Port
8 Eggs
1 pint Heavy Cream
1 quart Milk
1/2 pound Sugar

Beat yolks and whites of eggs seperately. Add sugar to egg whites and beat until stiff. Combine yolks and whites and mix thoroughly. Add Port. Beat mixture. Add cream and milk. Mix. Chill well. Serve with a light sprinkling of nutmeg.


Port Wine Flip

4 oz. Port
2 tbsp. Sugar
1 beaten Egg

Shake well with cracked ice and strain into sour glass. Sprinkle nutmeg on top.

Combine all but club soda over ice and stir. Fill with club soda. Stir.

2 1/4 oz. Light Rum
2 tsp. Creme de Coconut
2 tsp. Lime Juice
Club Soda

Shake well with cracked ice all but club soda. Strain into highball glass over 2 ice cubes. Fill with chilled club soda. Stir gently. Top with sprigs of mint.

1 1/2 oz. Rum

2 1/2 oz. Gin

1 tsp. Powdered Sugar

Mix sugar with lemon juice and water in highball glass until sugar has dissolved. Fill glass with ice and add Rum. Stir. Garnish with slice of lemon and serve with straws.


Rum Highball

1 1/2 oz. Rum (light or dark)
Club Soda or Ginger Ale

Pour Rum over 2 ice cubes into highball glass. Fill with club soda or ginger ale. Stir gently. A twist of lemon peel may be added if desired.

2 oz. Light Rum
1 tsp. Powdered Sugar

Pour Rum over 2 ice cubes in collins glass. Fill with chilled orange juice. Stir well.


Rum Soaked Pineapple

Pineapple Slices
151 proof Rum

Slice pineapple into small chunks. Lay out on baking pan with toothpicks in each. Pour in just enough 151 proof rum to cover the pineapple slices. Let sit for several hours. Pour out excess rum and serve.


Rum Soaked Watermelon

1 whole Watermelon
1 pint Light Rum

"Cut small plug out of side of watermelon. Pour in Rum. Refit hole with plug and tape with strong tape. Let watermelon soak for 24 hours, rotating 1/4 turn every few hours. Take out plug and pour out excess Rum. Slice watermelon and serve."
